The renovation of the restaurant, known internally as “Mochi Director’s Cut”, is a further development of the existing concept. The focal point of the interior is a geometrically folded kitchen block made of rammed earth, realized by Vorarlberg’s earth building expert Martin Rauch. The complementary canopy made of Austrian linen, protected behind gallery glass, continues the parametrically developed lines and blends harmoniously into the minimalist ensemble. Targeted lighting accents reinforce the intense spatial effect, which is inspired by traditional Japanese soup kitchens.
